I pulled a cooked chicken out of the freezer the other night, and I could tell it was going to be really dry, so I made up a marinade based on various recipes I found online. I squeezed two oranges, and put the juice in a double bag along with four cloves of garlic (chopped small enough to be pleasant to eat,) a sliced onion, a bit of olive oil (maybe 2 T,) 1/2 t sage, 1 t oregano (I’m guessing — I actually just threw some in,) and the chicken pulled apart into pieces, bones included. It came out really well, only I think I would put some salt and pepper in next time!

I don’t know if it’s my browser or what, but I’ve added 3 recipes and they’re all getting kindof tangled up. The pasta primavera and mid-eastern feast are getting switched around part 5 and the white sauce and it looks like the pizza recipe is inserted somewhere in there, too. i’ve checked the post listing and everything looks fine in there, but it’s not displaying right. i’ll come back in a few days to work on it, but if any of you want to take a stab at it, feel free. and if you don’t see any problem, you can delete this post thanks! –Amy

This is all you need for an entire middle-eastern meal. Each step is pretty simple, but it does require some chopping and food-processing. i hope you enjoy these flavors as much as I do!

1) Kofta
These are tasty middle-eastern meatballs that are super-easy to make.
they can be baked, fried, or grilled. just sacrifice one to check the
done-ness…i’m obviously not that time-conscious.

1 cup plain breadcrumbs
1 lb ground lamb or beef
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ground cumin
1/2 teaspoon allspice
1 teaspoon dried mint
2 cloves pressed garlic
2 tablespoons parsley
1 egg
1 tablespoon olive oil (if frying)

Then just smash it all together with your fingers.

2) Hommus
This stuff is outrageous to buy at the grocery store! no more! it’s
so cheap to make if you have a food processor!

1 can garbanzo beans, strained
1/4 cup grabanzo juice or water
1/4 cup lemon or lime juice
2-7 cloves pressed garlic (it’s good with 2, i had an egyptian friend
add 7, but some of those were roasted)
1/2 cup tahini (it’s sesame paste/butter – it might be in the
organic/health section)
some salt

this is just an estimation. check when you’re adding everything–turn
off the blade and stick your finger in. add some tahina and salt til
you get it how you want it both in texture and in taste. it’s really
fun to just figure it out as you go. and sooo yummy!

3) yogurt sauce

2 cups plain yogurt
1 cucumber chopped
1/2-1 onion chopped
some salt

4) tomato and cucumber salad

chop up some tomatoes and some cucumbers. add salt & pepper and olive oil

simple supper:

1) Kofta
These are tasty middle-eastern meatballs that are super-easy to make.
they can be baked, fried, or grilled. just sacrifice one to check the
done-ness…i’m obviously not that time-conscious.

1 cup plain breadcrumbs
1 lb ground lamb or beef
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon ground cumin
1/2 teaspoon allspice
1 teaspoon dried mint
2 cloves pressed garlic
2 tablespoons parsley
1 egg
1 tablespoon olive oil (if frying)

Then just smash it all together with your fingers.

2) Hommus
This stuff is outrageous to buy at the grocery store! no more! it’s
so cheap to make if you have a food processor!

1 can garbanzo beans, strained
1/4 cup grabanzo juice or water
1/4 cup lemon or lime juice
2-7 cloves pressed garlic (it’s good with 2, i had an egyptian friend
add 7, but some of those were roasted)
1/2 cup tahini (it’s sesame paste/butter – it might be in the
organic/health section)
some salt

this is just an estimation. check when you’re adding everything–turn
off the blade and stick your finger in. add some tahina and salt til
you get it how you want it both in texture and in taste. it’s really
fun to just figure it out as you go. and sooo yummy!

3) yogurt sauce

2 cups plain yogurt
1 cucumber chopped
1/2-1 onion chopped
some salt

4) tomato and cucumber salad

chop up some tomatoes and some cucmbers. add salt & pepper and olive oil

sprinkled on or just put everything in little dishes and have everyone
grab what they want with their pitas. enjoy!

This recipe is from Food Magazine. It is amazing and easy.

Wheat Pitas
Olive Oil
Hummus (I want to say the big container)
Red Peppers
Canned Artichoke Hearts
1/2 or 1 lb. Ground Lamb (you can substitute ground beef)
Fresh Parsley
Lemons

Cut the Pitas around the circumference and peel the two rounds apart (Usually one pita split is a good amount for one person). Spread or sprinkle a small amount of oil on each round. Then spread some hummus on the round. Sprinkle sliced red peppers, quartered artichoke hearts and ground lamb on the pizzas. Bake at 450% for 20 minutes. Sprinkle with fresh parsley and serve with lemon wedges.

This is one of our favorites.

thoup, n.: a nickname for soup that satsifies the stomach of Bridget’s dad particularly well. Repeated often at her family’s dinner table.

- ORIGIN happily fed Germanic male, 20th c.

Put all ingredients in med / large saucepan and heat.

1 can Campbell’s Reduced Sodium Chicken soup with rice (the brothy soup)

1 can water (as per directions on label of soup)

1 can corn (do not drain)

1 large can diced tomatoes (do not drain)

1 can chunked chicken (do not drain) *note: this is from Costco – I don’t know what size can it is from a reg. grocery. About 1.5 – 2 X the size of a can of tuna.

1 cube chicken bullion, dissolved in about a cup of water

salt to taste

pepper to taste

rosemary to taste

thyme to taste

If you desire a perfect dining experience, eat soup with toasted, buttered cheese bread, a glass of water, a heating pad on your lower back, and sit in a recliner while watching Casino Royale. This is merely a suggestion.

Welcome to Forget Ramen. It occurred to me sometime last month that I had a couple of nice kitchen/meal discoveries that other single or recently un-single girls with an appreciation of food and a full time job that keeps her busy might appreciate. Then I thought that probably all those other girls had their own stovetop wizardy that I would be glad to learn. So here it is: a recipe share blog for us! Put in two recipes a year or ten. You can categorize your entries by meal (i.e. breakfast) or main ingredient (i.e. beef). Just make sure you sign your name at the bottom so we can give you kudos! Like this:
